Mmm! Last week, I talked about how I made these lemon bars!
I had a big bowl of lemons and didn't know what to do with them and decided lemon bars would be perfect! I haven't ever had or made these from scratch before, so it was fun and definitely worth it!
Recipe:
For Crust
- 2 cups flour
- 1 cup powdered sugar
- 1 cup butter softened
- 1 teaspoon vanilla (more or less depending on how much you like vanilla. I happen to love the stuff)
For Filling
- 4 eggs
- 2 cups sugar
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/3 cup lemon juice
- a couple of teaspoons of grated lemon
- 1/4 teaspoon salt
- more vanilla. so good.
Beat the eggs for a good five minutes on low-medium. Then add in the sugar, flour, baking powder, salt and vanilla. Slowly add in lemon juice and grated lemon. Do this for another few minutes..if you have a mixer, turn it on, break up a fight between your kids, sit down and read the mail, clean up a mess and then remember its still going.
Spread into warm crust and bake for another 25 minutes. Let cool.
Two options after this:
powdered sugar sprinkled on top
or..... this amazing frosting:
1 cup powdered sugar
3 tablespoons lemon juice (i zested lemon in it too)
1 tablespoon melted butter (maybe...you might not need this ingredient. try it with the first two alone first)
mix until its a good frosting consistency, spread over lemon bars.
